Apple Manchego Chive Salad
Apple Manchego Chive Salad has been the darling of my fall recipe repertoire. Sweet-tart apples, buttery cheese, and mild chives in a grassy-lemony dressing. It's somehow both simple and complex, and at the same time effortless and impressive.
- 4 small firm apples
- 2 tbsp lemon juice divided
- 4 ounces manchego cheese
- 1/4 cup chives
- 2 tbsp extra virgin olive oil
Using a mandoline or knife, cut apples into matchsticks. Toss with 1 tablespoon lemon to prevent browning.
Using a mandoline or knife, cut manchego into matschsticks. Toss with apples.
Snip chives and toss with apples.
Whisk together remaining 1 tablespoon lemon juice and olive oil. Toss with salad. Serve immediately (though the apples lose some crispness, I find leftover are still delicious for a couple days).
