Marinated feta with garden herbs, dried peppers, and luscious fruity olive oil is a swift way to make your week a little extra special. Sometimes, we need quick recipes in order to slow down.
Another quick recipe post coming at ya! Marinated feta, which is so quick and so simple, yet a little extra special. Snip a few herbs from the garden, grab some of last year’s dried peppers, and sprinkle them over some feta in a super cute jar. Slowly drizzle a fruity olive oil over the top. Slowly, so you can peacefully appreciate it’s soothing simplicity, all while feeling a wee bit fancy.
And yes, we will be using this marinated feta in an upcoming recipe, just like we did with those quick refrigerator pickles. Because sometimes, breaking things down into more manageable pieces or creating things that can be re-purposed over and over again is an efficient way to achieve a sense of accomplishment. Am I right or am I right?
Although I made this with a single purpose in mind (coming to you soon), this little jar of generosity ended up contributing to recipes all week. I figured if it saved me some sanity, maybe you’d like it too. Because I can’t lie to you, this time of year I always end up feeling a bit overwhelmed. And by “a bit” I mean completely and totally over the top-like. The garden is still in full swing, which means I’m canning, pickling, preserving, drying, and freezing ALL the things. And I mean, I love it, really I do. But I get behind on all the OTHER things, which grow and grow on me until I just freak out. Totally freak the eff out.
Happens every year.
Which is whyyyyyy little beautiful things like this jar of marinated feta bring me a little peace because I can make a dish a little extra special with minimal effort. And by gol’ when all else is spinning out of control, I at least have to eat well. And let’s be real, here. You can do SO many things with this marinated feta.
- Plop it on a pizza.
- Smoosh it on a sandwich.
- Hurl it onto hummus.
- Pitch it over pasta.
- Sling it on a salad.
- Use the oil as a base for a sauce OR dressing, hello!
And Oooh my-Lanta! I sound like the Bop It commercial: bop it… twist it… pull it… flick it!

DANGIT! Right when I think I’m starting to write more sophisticated like . . . .
- Feta cheese
- Fresh herbs like basil and thyme
- Dried hot peppers
- Fruity olive oil enough to cover
- Add feta, herbs, and peppers to clean jar.
- Top with oil. Refrigerate and consume within 2 weeks (oil will solidify in the refrigerator).
- How easy was that?
