THIS! This cheesecake. This pumpkin bourbon sea salt caramel toffee cheesecake. This, my friends, is what dreams are made of, and I can’t wait for you try it! We have pumpkin, and bourbon, and sea salt caramel, and toffee, and gingersnap cookie crust, all wrapped up IN A CHEESECAKE. Seriously, does it get any better? Nope, it does not, and this is my promise to you.
Our Thanksgiving table is not complete without this cheesecake. About 6 years ago, I wanted to amp up the ol’ pumpkin pie tradition, and this is now a Thanksgiving staple. Hard to do in my family where the same recipes have been served since . . . well, like ever. As long as as I have known anyway. And it’s extremely hard to do when your sissy LOVES pumpkin pie. So what’s a girl to do? Throw in a ton of other favorites of hers, that’s what chicken butt!
Growing up, we made a cheesecake every Sunday evening. Yes, you read that right: cheesecake every week. I knew I couldn’t go wrong with it as the base, and my cheesecake making skills were on point. Pumpkin pie spices were an obvious choice, and instead of a traditional graham crust, her favorite cookie would be perfect: ginger snaps. I shall top it with her beloved chocolate toffee candy and sea salt caramel, which I’ve seen her sneak straight from the jar. Finally, I’ll add some bourbon for good measure, because what WI girl doesn’t love a bourbon ol’ fashioned? Not these two, that’s for sure.
But here’s the other amazing thing about this cheesecake, my friend: it’s an incredible morning-after-Thanksgiving breakfast. I swear it tastes better then than at any other time. Think about it: you, fresh coffee, a good book, and pumpkin bourbon sea salt caramel toffee cheesecake, mmmkay? Yes, OK, I’m glad we are on the same page.
Thanksgiving is all the things I love wrapped up into one amazing package of family, friends, and over-indulging in food and bevs, and I’m sad this year is over. Even if the Packers lost to the Lions. I think I love it so much because it’s without the materialism and commercialism that sneakily weasels it’s way into other holidays.
Thanksgiving is about coming together with the people you love, sharing a meal, and being thankful.
And I’m damn thankful for this cheesecake. Period.
